This chapter discusses the link between alcohol consumption and liver and pancreatic cancer. Alcohol is known to promote inflammation of both the liver and the pancreas, leading to liver cirrhosis and pancreatitis. These two chronic conditions have been in turn associated with increased risk of liver and pancreatic cancer. While liver cirrhosis precedes the development of liver cancer in most of cases, long-standing chronic pancreatitis precedes pancreatic cancer in a very small proportion of cases. Therefore, the contribution of heavy alcohol intake on the risk of developing cancer, mediated by chronic inflammation, varies widely for both organs.
