This chapter discusses the link between alcohol consumption and upper aerodigestive tumours. Upper aerodigestive tract (UADT) cancers include malignancies of the oral cavity, oropharynx, hypopharynx, larynx, and oesophagus. The major histological type of oral cavity, pharyngeal, and laryngeal cancers is squamous cell carcinoma (SCC), while the proportion of adenocarcinomas to SCC varies by geographic region for oesophageal cancers. While tobacco smoking is the most important risk factor for SCCs of the UADT, studies focusing on never-smokers have demonstrated an independent effect of alcohol. Consuming 50g of alcohol per day may increase the risk of oral cavity and pharyngeal cancers by approximately threefold, the risk of laryngeal cancer by twofold relative to non-drinkers, and the risk of SCC of the oesophagus by fivefold. In contrast, alcohol drinking was not strongly associated with oesophageal adenocarcinomas.
