This chapter discusses allergy and immunological disorders. It includes an overview of the immune system, primary and secondary immunodeficiencies, interactions of the immune system and nutrition, mucosal immunity, and the influence of diet on mucosal immunity. Immunological changes in specific malnutrition syndromes, allergic diseases, vitamin and trace element deficiencies, food allergies, and IgE immune-mediated and non–IgE immune-mediated reactions to food are described. Allergic proctocolitis, food protein–induced enterocolitis syndrome, and allergic and eosinophilic gastrointestinal disease are specifically discussed, as is testing for food hypersensitivity.
